Vegetarian Lasagne Recipe


Vegetable Lasagne alterations: Bake pumpkin in (or sweet potato) in oven. Stir fry capsicum and finely diced eggplant until eggplant is soft, add tomatoes, dried mixed herbs (about a teaspoon?) and chopped spinach. Bring to boil then simmer. Slice lengthways 3 zucchini and grill in sandwich press. Layer zucchini, sweet potato and tomato mix. Repeat and sprinkle top with cheese. YUM!
