Spicy Vegetable Khichdi| One-pot meal with vegetables, lentils and rice| Vegetarian Recipe

Vegetable Khichdi is a one-pot meal with vegetables, lentils and rice. It is a comfort food on cold winter evenings, and healthy too!

Rice – 2 cups;
Red lentil/masoor dal – 1/2 cup;
Mung lentil/mung dal – 1/2 cup;
Whole spices (optional) – 2 bay leaves, 1/2 stick cinnamon, 6 cloves;
Garlic – chopped, 2 tbsp;
Ginger – minced/chopped, 1 tbsp;
Green chilli – finely chopped, 1tbsp;
Ground spices – 1 tsp each of turmeric powder, coriander powder and garam masala powder, 1 tbsp red chilli powder;
Chopped onions and tomatoes – 1 cup each;
Vegetables (your choice) – diced potatoes, chopped spinach cabbage, carrots, beans, green peas etc (about 1/2 cup each);
Coriander leaves/ cilantro;
Lemon/lime juice – 1tbsp;
Salt to taste;
Water – 5 cups (for dry consistency)/ 6-7 cups for watery consistency;
Cooking oil – 2 tbsp;
Ghee/clarified butter – 1 tsp.
