Butternut Squash, Caramelized Onion, and Spinach Lasagna – Yummy, healthy recipe from Cooking Light but I recommend adding a pat of butter to truly caramelize the onions. Also, instead of following the sauce directions in the recipe, I made a Bechamel with Almond Milk and then stirred in one cup of shredded low-fat Mozzarella. Delish!
