How to Make a French Lentil Salad | Simple Servings

FRENCH LENTIL SALAD
I love this salad because it’s super protein packed and travels great for a workday lunch. I also love serving alongside grilled sweet Italian sausages. And, like almost everything I make, I love placing it atop a plate of greens.
FRENCH LENTIL SALAD RECIPE
1 cup french lentils (also known as du Puy lentils)
1 cup cherry tomatoes, halved
1/4 cup flat-leaf Italian parsley, chopped
1/4 cup olive oil
2T. Red wine vinegar
2 heaping T. of Dijon mustard
Juice of 1/2 lemon
Large pinch of sea salt
—Bring a pot of water to boil and add your lentils. Reduce heat so that you have a fast simmer and cook for 20 minutes. You don’t want the lentils to completely collapse—they should still have a bit of bite to them. Drain lentils.
—Make the dressing: Combine olive oil, vinegar, mustard, lemon juice and salt. Shake until well combined.
—Toss lentils, tomatoes, parsley and dressing together and enjoy!
