This pasta salad recipe is so easy to make. It is perfect for Spring/Summer parties or, days when


1) 2 cups Penne Pasta (OR, pasta of your choice)
2) 1 Cup Boiled or Canned Red Beans
3) ½ Cup Thinly sliced Bell Peppers (Any color(s))
4) ½ Cup Thinly sliced Sweet Onions
5) 1/3 Cup Red (OR, Green) Grapes

For Dressing:

1) 2-3 tbsp Lemon juice
2) 1 tbsp Olive Oil
3) 2-3 Minced Garlic cloves
4) Salt to taste
5) Red pepper (chili) flakes and/or chopped green chilies
6) Italian Seasoning (AND/OR Dried oregano, basil)


Combine the ingredients in a big bowl. Prepare the dressing by adding all the dressing ingredients into a glass jar (or shaking jar), shake well. Pour the dressing over ingredients – give it a good mix until the salad is fully incorporated. Enjoy!

You can make it this ahead of time for any party/lunch/dinner – it holds up nicely OR, put it together last minute (joys of easy recipes)


When boiling pasta, make sure you add the pasta when water comes to a boil and don’t forget to add the salt to it – the water should be really salty whilst boiling the pasta and cook it until Al Dante OR, it will turn mushy.
