Jello Vegetable Salad Served over Fresh Kale

Straight out of the late 1950’s to mid-1960’s this Jello salad has crisp radish, fresh cauliflower and spring onions all encircled in orange Jello with a little apple cider vinegar.
It goes really well with any main dish from fish, chicken, beef
or pork. The great part is everyone will be getting a good helping of raw vegetables.

Here’s the recipe:
1 pack of Jello, orange, lemon or lime (3.4 ounce box)
1/2 cup boiling water
1/4 teaspoon salt
3 teaspoons apple cider vinegar
Ice to come up to the two cup level (remove ice that does not melt)
3 green top onions slice in small rings
1 cup of fresh sliced radish
2 cups of fresh cauliflower florets (small pieces, no stems)
Slightly grease bowl or container of your choice.

This recipe can be doubled or even tripled to serve a large group.
Just use a bigger container. A large mixing bowl works great.
It looks fantastic on a platter surrounded with fresh curly kale.
Everyone will be impressed.
