The Best Porridge Recipe | Quick, Healthy, Vegan

Soak 50g oats (I use organic jumbo, but instant will work) in water or plant mylk or a mixture of the two for a minimum of 10 minutes.
Add the soaked oats into a saucepan with 1/4 tsp of cinnamon, a pinch of salt and an optional drop of vanilla extract. Cook for 4-5 minutes, stirring occasionally.
In a cup, mix a heaped tsp of sweet miso paste with a splash of plant milk or water, 1 heaped tsp of tahini or nut butter and 2 tsp of maple syrup.
Finely chop an apple or other seasonal fruit. Tip the oats into the bowl and pour over some plant milk, the apple, some seeds or granola for crunch and the sweet miso sauce. Add an extra pinch of salt or drizzle of maple to taste. Enjoy!
