MUGHLAI CHICKEN STEW Recipe



This Old Delhi Style Mughlai Mutton Stew recipe is a royal, delicious assemblage of fine flavours brewed
with mutton and spices. Learn to make Karim style Mutton Stew at home using this easy pressure
cooker recipe. Here is how to make Mutton Stew in Delhi Style.

Ingredients:
Chicken meat pieces 1 kg
Onions 4 finely chopped
Tomatoes 3-4 chopped
Oil 1 cup
Garlic chopped 2 tbsp
Ginger chopped 2 inch piece
Salt 1 tbsp
Whole red chillies 10 (cut in pieces)
Black pepper corns 10-15
Cinnamon (Dalchinni) 1 inch stick
Brown Cardamom (Badi Elaichi) 3
Cloves (Laung) 5
Cumin+Coriander powder (grinded) 2 tbsp
Turmeric powder 1 tsp
Yogurt 3 tbsp
Green chillies 5-6 (small sized) chopped
Lemon juice 2-3 drops
Green Cardamom (Chhoti Elaichi) 5
Cumin Seeds 1/2 tsp
Nutmeg ( a bit)
Mace 1 piece
Kewra essence 1 tbsp
Saffron threads 1 pinch (optional)
Bay leaf 1
Asli ghee 2 tbsp
Fresh coriander leaves 3 tbsp chopped

Method:
1. Heat the oil in a wok or a cooking pot.
2. Add chopped garlic and fry until it is slightly brown.
3. Then add chicken pieces and stir it for few minutes until the colour is changed then remove to a dish.
4. Now add onions, tomatoes, black pepper, cinnamon, 2 brown cardamom, cloves, turmeric powder, 1
tbsp cumin coriander powder, salt, half cup of water and mix well.
5. Cover and cook on a gentle heat till onions and tomatoes are soften.
6. When masala is well done, add chicken pieces and stir it till the chicken & the masala is combined.
7. Then add whole red chillies (cut in pieces), bay leaf, chopped green chillies and ginger, half cup of
water. Mix well and let this all cook till the chicken is tender.
8. Now put the nutmeg, mace, cumin seeds, green cardamom, 1 brown cardamom into a blender and
make a smooth grinded powder. When chicken is almost done
include 1 teaspoon of it and yogurt and mix them properly.
9. Add saffron and asli ghee. keep it on low flame for 5 minutes to dissolve all spices well together.
10. In the end, add lemon drops, chopped coriander leaves and remaining cumin coriander powder.
Serve hot with naan or chapati.
