Vegan Recipe Coconut Milk Red Curry



How to make vegan curry! This is a coconut milk based curry that you will certainly love.

Vegan Curry Ingredients
1 tablespoon unrefined coconut oil
1 yellow onion (chopped)
1 tablespoon or thumb of minced ginger
4 cloves garlic or 1 tablespoon if you have the large pre-mined jars
2 tablespoons mild curry powder
2 cups of vegetable broth
2 tablespoons amino braggs (any soy sauce or tamari will do)
2 tablespoons pure maple syrup
2 tablespoons tomato paste
1lbs yukon gold potatoes cubed or chopped into small pieces whichever you prefer
4 carrots chopped
1 full head of cauliflower chopped up
1 can of chickpeas a.k.a garbanzo beans
1 cup coconut milk from a can (do not use light coconut milk)
lots of chopped cilantro

How to make vegan curry directions:
1. melt coconut into pan and throw in onions and sauté a few minutes
2. add minced ginger & garlic cook a few more minutes
3. add curry powder, soy sauce, maple syrup, tomato paste
4. now add the veg broth. stir and then add potatoes & carrots. cover pot and bring to a boil
5. reduce the heat and pull the lid back a little to let the steam out for 7 minutes
6. add cauliflower, chickpeas, coconut milk
7. cook for another 7 minutes
8. fold in cilantro and enjoy !

that’s it you are done! now serve with any rice you have and garnish with more cilantro and enjoy !
