Fast Vegetable Broth Recipe – An Easy Vegan Dish for Beginners

Learn how to make this homemade Vegetable Broth fast, in 45 minutes.

A tasty vegetable broth is key for making various vegan, vegetarian or plantbased recipes. So this is both, an important ingredient to have for other dishes, but also a quick, simple and healthy dish on its own.

I use this homemade vegetable broth or stock in rice dishes, all sorts of sauces, you can use it to make Cous Cous, chickpeas, lentils, and more, and of course it’s the base of a Minestrone and other vegetable soups!

INGREDIENTS

2 Onions
2 Carrots
2 Celery stalks
1 Leek
Parsley
Thyme
2-3 Bay leaves
1 Tbsp Rapeseed oil
1/2 Glass White wine (75-100ml)
3L Water or liquid vegetable stock (optional), or combination of the two
1-2 Vegetable Stock cubes, organic (optional)

PREPARATION

Just give those veggies a quick rinse, skip peeling the carrots, keeping the onions whole, but remove their outer skin. Cut your veggies into large chunks and simply score them a few times. No need to spend time dicing them!

Heat some rapeseed oil in a large pot on a medium high heat.

Let the vegetables sweat for 2-3mins. Then pour in some white wine – about half a glass. Now Get that heat up to the max, and let them simmer until all the alcohol has evaporated off, about another 2-3min.

Pour in water, or here i’m adding 2 litres of liquid vegetable stock and 1 litre of boiling water. The vegetable stock is optional – just my preference for flavour. Also you can Add 1 or 2 pastilles of dried organic vegetable stock. Just remember that when you season your broth with salt, you make sure to account for those pastilles and the type of stock you’ve added.

Now give it a good stir, set the heat to medium low, and cover your pot. Time to let the broth simmer for about 30 minutes.

Give it taste and see how much seasoning it needs. Here i’m only adding a little salt and some fresh black pepper.

Finally, pour the broth through a fine sieve and set aside.

And it’s ready to be served or to be used to make other dishes. You can serve it hot with some freshly chopped parsley, or even parmesan, if you like your cheese. Or if you want your kids to love it, simply add some fun alphabet pasta!

This broth makes a great base for sooo many dishes, so feel free to make a large pot and store it in the fridge for a few days, or freeze part of it.
