Chinese Chilli Egg Omelette (Chinese Spicy Vegetarian Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

This is a quick and easy dish to cook, but still delicious to serve with rice dishes.

3 Eggs
3 Green Chilli Peppers
Salt to Taste

1. Break the 3 eggs in a bowl
2. Finely slice the chilli peppers
3. Place the peppers in the bowl and beat until light
4. Heat 2 Tbsp oil in the wok on medium high heat until hot
5. Add the egg mixture to the wok
6. Fry for 2 minutes on each side until the egg cooked through
7. Remove from wok onto a dish
8. Garnish and serve
