Chinese Chilli Lime Chicken Salad (Chinese Cooking Recipe)

Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.

2 Chicken Breasts
½ Lime
30g Coriander
10g Ginger
3 Cloves Garlic
3 Small Chillies
1 Tbsp Light Soy Sauce
½ Apple
1 Star Anise
50ml Chicken Stock
Salt to Taste

1. Slice apple and half of the ginger
2. Finely chop garlic, coriander, chillies and the remaining ginger
3. Place chicken in a saucepan, add a litre of water, sliced ginger, star anise and apple
4. Boil chicken for 20 to 30 minutes. Remove from pan, drain and cool down
5. Tare chicken into thin threads and place into a salad bowl
6. Add soy sauce, chicken stock, coriander, the chopped ginger, garlic & chillies
7. Squeeze the lemon juice into the bowl and mix all ingredients together
8. Transfer onto a dish, garnish and serve
