3 Bean Mediterranean Salad
The Mediterranean diet may increase life expectancy. This three beans; garbanzo, black beans, and red kidney beans; healthy plant based protein; mixed with cucumber, tomato, red onion, parsley, and cilantro; make this vegan salad a complete meal or a healthy and flavorful side dish. The dressing contains olive oil, red wine vinegar, lemon juice, and fresh garlic; all common in the Mediterranean region where people tend to live longer lives.
This simple recipe is base and more vegetables may be added including Swiss chard, collard greens, mustard greens, spinach, or any other leafy vegetable. It pairs well with fresh, crusty bread.
