Happy new year folks! I hope you had a good one. It’s great to be back after a long rest, and boy have I missed you all! So it’s 2018, i’ve hot 3k subscribers and i’ve got some plans for the channel. It’s going to be a good year, I can feel it!

So, on to the recipe then. So I thought i’d kick start the year by making something a little healthier. As you well know, my channel isn’t a healthy channel (no kale and strawberry smoothies here!) but my food is healthy by default, and as long as you don;t pig out, then the majority of my recipes are nutritious and good for you. That being said, it’s always a good idea to eat something lighter, to feel better about all that excess over the festive period. This is my chicken noodle soup, using leftover roast chicken from the day before. Adding in some chopped veg, spices and water is all you need to make a light, healthy chicken noodle soup that’s packed full of goodness.

To make my chicken noodle soup you will need:
►1 medium sized chicken carcass with any meat removed
►4 medium carrots
►2 celery sticks
►2 medium onions
►3 fat garlic cloves
►2 bay leaves
►1 star anise
►About 8-10 peppercorns
►About 1.5 litres of water (enough to cover)
►1 small can of drained sweetcorn
►About 50g of dried rice noodles
►Chilli flakes and parsley to garnish (optional)
